Mark Gresge, head chef at l'Etoile, entered the food business in 1993 after left an engineering job near Charlottesville. He soon opened a lunch room in town, where his wife Vickie worked during that time. At l'Etoile, Mark and Vickie have grown the restaurent from a simple "Tea Room Cafe" to a highly rated French-Virginian style restaurent in Charlottesville.
Chef Gresge has been showcasing local produce at the restaurant for more than ten years. Chef Gresge not only has a passion for the flavors and textures of the food, but also the science behind them. L'Etoile purchase the freshest ingredients from local farmers and infuses them into dishes that change with each season.
